Objective: The Certified Menu Planner course is designed to provide comprehensive knowledge and practical skills in designing menus for restaurants, catering services, institutions, and special events. The course covers key areas such as menu types and formats, nutrition and dietary considerations, food trends, pricing strategies, seasonality, and sourcing ingredients.

Certification: Within 5 days after Completion of Online Assessment.

Steps to become a GSDCI Certified Professional:

Step 1: Select your certification you want to pursue.

Step 2: Click on get certified tab, new pop up window will open.

Step 3: Click on pay certification fee, you will be redirected to billing details page.

Step 4: Fill your details and click on pay certification fee, You will be redirected to payment gateway, pay fee by any available options like Card(Debit/Credit), Wallet, Paytm, Net banking, UPI and Google pay.

Step 5: You will get Login Credentials of Online E-Books and Online assessment link on your email id, within 48 hrs of payment.

Step 6: After completion of online assessment, you can download your Certificate Immediately.

Module 1: Fundamentals of Menu Planning: Role and importance of menu planning, Types of menus (à la carte, table d’hôte, cyclical, static), Principles of menu design and layout, Understanding target market and customer preferences, Meal patterns and menu balance, Trends in modern menu planning.

Module 2: Nutrition and Dietary Considerations: Basics of nutrition and food groups, Caloric values and portion control, Planning menus for special diets (vegan, diabetic, gluten-free), Allergen awareness and labeling requirements, Nutritional analysis of menu items, Promoting health and wellness through menu design.

Module 3: Food Costing and Pricing Strategies: Calculating food cost and portion yields, Standardizing recipes for consistency, Menu pricing methods (markup, contribution margin), Profitability and menu engineering, Controlling waste and optimizing ingredient use, Budget planning for food service establishments.

Module 4: Culinary Styles and Menu Variety: International and regional cuisines overview, Course sequencing and cultural food preferences, Incorporating seasonal and local ingredients, Creating theme-based and event-specific menus, Fusion cuisine and innovation in menu creation, Beverage and dessert pairing suggestions.

Module 5: Menu Design, Layout, and Presentation: Typography and graphics in menu design, Structuring menu categories and item descriptions, Psychology of menu placement and pricing, Digital menus and interactive formats, Branding and visual consistency, Printing and material selection for menus.

Module 6: Menu Evaluation and Operational Integration: Testing and evaluating new menu items, Gathering customer feedback and satisfaction data, Adjusting menus based on performance analysis, Coordination with kitchen and procurement teams, Legal and labeling compliance, Sustainability in menu planning and sourcing.

GSDCI Online Assessment Detail:

  • Duration- 60 minutes.
  • Number of Questions- 30.
  • Number of Questions from each module: 5.
  • Language: English.
  • Exam Type: Multiple Choice Questions.
  • Maximum Marks- 100, Passing Marks- 50%.
  • There is no negative marking in any module.
